Monday Night Jambalaya with King Prawn and Chorizo…

One of the Hairy Bikers recipes recommended by my sis, this Southern Jambalaya involves plenty of chopping, lots of colour and amazing warmth, which might have something to do with the cayenne pepper!

Once you’ve chopped, peeled and crushed it’s pretty simple really and the chorizo oil is great for frying the onions, peppers and celery in.

It’s supposed to have king prawns, chorizo and chicken in it, but I went just for the first two…not because I forgot to get the chicken out the freezer, promise! 

Low on calories and full on flavour it’s one of my new fave dishes and I’ve got plenty left over for tomorrow night too!
