Ok so the weather is scorching but I’ve never really been one to stick to the normalities of things, besides, I wanted to try out this new recipe so soup it was in 20degree heat!
Super easy and quick all you need is:
- An onion roughly chopped
- 1 carrot peeled and chopped
- 1 large potato peeled and chopped
- 2 celery sticks finely chopped
- 125g red lentils
- 1tbsp curry powder
- 400g tin of chopped tomatoes
- 600ml vegetable stock
Throw the potato, carrots, onion and celery into a pan with a drizzle of oil and stir fry for 2 minutes, then wack in everything else, being to the boil then simmer for 20 minutes or until the lentils are cooked.
Crusty bread optional, but always welcome in my house to be perfectly honest and maybe a glass of tonic water…perfect!
Oh and how nice are my soup bowls? Got them a couple of years ago from a place called Eibsee in Bavaria!
